We use a rich variety of spices and herbs, not just for their flavor, but for their powerful digestive and therapeutic properties. There’s a deep intelligence in how spices are combined and cooked: they help stimulate digestion, are an important source of minerals and nutrients, they enhance nutrient absorption, and ensure proper elimination—key steps for a healthy gut and body.

What’s on the Plate?

Our menu is predominantly vegetarian, featuring:
  • Fresh vegetables and leafy greens

  • Fresh cheese, yogurt, tofu, nuts, legumes, and local fish

  • A variety of organic grains and flours including quinoa, millet, amaranth, buckwheat, rice, oats, teff, and spelt

Every dish is balanced—with the right mix of healthy carbs, proteins, and fats—and designed to support optimal metabolism.

Garden-to-Table

A lot of food joy is derived from eating our fresh vegetables, fruit and herbs harvested directly from our organic garden. Every season has something wonderful in store: beets, kale, fennel, zucchini, pumpkin, broccoli and lots of fresh herbs. We also source locally whenever possible and prioritize fresh, local and organic produce to ensure the highest quality and nutrient density.

Healing from the Inside Out

We place special emphasis on gut health. Many of our dishes include 30+ plant species, with plenty of root vegetables and prebiotics to stimulate the production of butyrate, a key fatty acid for gut healing. Guests often report:
