What is Extra Virgin Olive Oil?

Extra Virgin Olive Oil is the highest quality olive juice.

Olive Oil has a lot of history in Andalusia, from thousands of years ago, it has been cultivated and the juice extracted and used for cooking and for other uses. At Harmony Home we use it as well for your massage therapies..

Due to its extraordinary qualities, Extra Virgin Olive Oil is today a fundamental food of recognized prestige in cuisine worldwide,  latest studies suggest that having a few olives during lunch protects you from heavy metals as well.

Extra Virgin Olive Oil is the olive juice obtained from the first pressing of the fruits,  We harvest the olives from the olive tree carefully to prevent them from being damaged and we take them the next day to the mill thus obtaining much more juice and of better quality.

At the mill they are cleaned and passed to the presses at a certain temperature, at which the oil will be obtained by mechanical procedures. The juice obtained from the first pressing is what is known as Extra Virgin Olive Oil. This year we have obtained 145 litres out of 620 kilograms of olives, a nice 23% aprox.

It can be said that Extra Virgin Olive Oil is Premium olive juice, the most important value obtained from this fruit.
